ORANGE-GLAZED SEITAN HAM

This seitan ham recipe will amaze you! It’s wonderfully salty and smoky, and it’s roasted to perfection with a fruity and zesty orange glaze. It’s perfect to serve for your next family feast, and any leftovers are perfect to thinly slice and serve in a delicious vegan ham sandwich!

Serves 4 to 6

For the Seitan

3 cups (405 g) vital wheat gluten

½ cup (48 g) chickpea flour (gram flour)

¼ cup (15 g) nutritional yeast

2 tsp (5 g) onion powder

1 tsp garlic powder

1 tsp smoked paprika

1 tsp ground black pepper

¼ tsp ground cloves

¼ cup (60 ml) fresh orange juice (roughly ½ medium orange)

¼ cup (60 ml) tamari

2 tbsp (30 ml) maple syrup

2 tbsp (30 ml) liquid smoke

1 (0.4-oz [11-g]) cube vegetable bouillon

1 cup (240 ml) water

1-inch (2.5-cm) red food coloring gel (optional)

20–30 whole cloves

In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, onion powder, garlic powder, smoked paprika, black pepper and ground cloves.

In a separate bowl, combine the orange juice, tamari, maple syrup, liquid smoke, bouillon cube and water. If you’re looking for a delicious pink coloring in your seitan ham, also stir in the red food coloring gel. If using, be sure to wear gloves! Whisk everything together until the bouillon cube is fully dissolved.

Pour the wet ingredients into the dry and knead everything into a dough ball, then dust a surface with a little extra vital wheat gluten and knead the dough by hand for 10 minutes to develop the gluten. You should get a smooth dough with individual gluten strands visible on the top. Place the dough ball in a bowl and set it aside to rest for 30 minutes.

In the meantime, preheat your oven to 380°F (193°C) and place a rack in the middle. Pour 70 to 105 ounces (2–3 L) of water into an ovenproof dish and place it in the bottom of your oven.

Once the resting time elapses, cover the seitan in one layer of parchment paper, then tightly wrap it in three to four layers of heavy-duty aluminum foil. Steam it in the oven for 45 minutes, turning it halfway through. Once done, turn off the oven and allow the seitan to sit in the oven for at least 2 hours to cool completely.

For the Glaze

4 tbsp (56 g) vegan butter

1 tbsp (15 ml) Dijon mustard

2 tbsp (30 ml) fresh orange juice (roughly ¼ medium orange)

2 oz (54 ml) fresh lemon juice

2 tbsp (28 g) light brown sugar, packed

1 tbsp (16 ml) molasses

2 tbsp (30 ml) vegan brandy (optional)

For Serving

In the meantime, prepare your glaze: In a small saucepan, melt the vegan butter, then stir in the Dijon mustard, orange juice, lemon juice, brown sugar, molasses and brandy (if using). Stir over low heat until all the ingredients are well combined, and the sugar is dissolved in the mixture, then remove it from the heat.

Preheat your oven to 380°F (193°C).

When your seitan is fully cooled down, carefully unwrap it.
